Kitchen Manager/ Chef

Summary: The Kitchen Manager/ Chef plays an integral role in creating Lion Bridge Brewing Company’s reputation for high customer satisfaction and achieving our mission of creating and providing food that is a catalyst to conversation and community.  The Chef is responsible for the kitchen operation including leading the kitchen team, creating and maintaining an artisan inspired beer friendly menu and managing costs while building and maintaining community. Performs duties that comply with local health codes, safe food handling procedures, and Lion Bridge policies and procedures.

Essential Duties:  

  • Supervises food preparation and cooks ensuring Lion Bridge high quality standards are met

  • Prepare food as required to meet patron standards and train kitchen team in processes and procedures to eliminate inefficiencies, error and waste of product and time

  • Creates recipes, enforces portion control and presentation specifications.  Train and hold staff accountable on same

  • Develops artisan inspired special dishes and special event menus that create conversation and community

  • Set expectations and create a culture of high quality and safety of food preparation and storage.  Hold staff accountable to these standards

  • Responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.

  • Anticipate and appropriately address concerns and complaints with staff. Hire, discipline and terminate staff as appropriate

  • Create and oversee kitchen equipment maintenance, cleaning and repair schedule and logs

  • Oversee kitchen budget and sales forecasting

  • Responsible for back of house labor percentages and budgets, inventory, cost of goods sold and all kitchen related expenses in line with Lion Bridge quality standards

  • Responsible for recruiting, hiring, coaching and developing talent to exceed customer expectations and create food that is a catalyst for conversation and community

  • Demonstrates excellent customer service standards

  • Works toward continuous quality improvement

  • Upholds, supports and promotes all company policies and procedures

  • Other duties as assigned

Supervisory Responsibilities: The Chef has supervisory responsibility for all kitchen functions including approximately 3 direct reports.

Qualifications: To perform this job successfully, the individual in this position must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the minimum knowledge, skills and ability required.

Education/Experience:

  • Associate's degree (A. A.) or equivalent from two-year college or technical school in culinary arts or a related field; or equivalent combination of education and experience.

  • At least three years progressive experience working in and leading a kitchen team

  • Proven ability to implement create menus using various cooking methods, ingredients utilizing appropriate equipment in a safe and cost-effective manner

Language Skills:

  • Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations.  

  • Ability to write reports, business correspondence, and procedure manuals.  

  • Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.

Mathematical Skills:

  • Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume.  

  • Ability to apply concepts of basic algebra and geometry.

Reasoning Ability:

Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.

Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

LINE/PREP COOK

Position Description
Lion Bridge is looking for a professional line cook to prepare food to the chef’s specifications and to set up stations for menu. The successful candidate will play a key role in contributing to our customer satisfaction, achieving our mission of preparing food that is catalyst to conversation and community.

Responsibilities

  • Set up and stock stations with all necessary supplies
  • Prepare food for service (e.g. chopping vegetables, cutting/tendering meat, preparing sauces)
  • Cook menu items in cooperation with the rest of the kitchen staff
  • Answer, report and follow chef’s instructions
  • Inform chef immediately of inventory shortages to avoid running out of menu items
  • Clean up stations and equipment
  • Stock inventory appropriately
  • Ensure that food comes out simultaneously, in high quality and in a timely fashion
  • Comply with nutrition and sanitation regulations and safety standards
  • Maintain a positive and professional approach with coworkers and customers complying with all applicable sanitation, health and personal hygiene standards and following established food production procedures. The cook is responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.

Requirements

SERVER/ BEERTENDER

Position Description

Lion Bridge is looking for a professional server to serve patrons by guiding them through food and beverage selections; presenting ordered choices and maintaining the brewery ambiance. The successful candidate will play a key role in contributing to our customer satisfaction, achieving our mission of serving beer and food that is catalyst to conversation and community.

Responsibilities

- Adheres to opening shift checklist, end of shift checklist and close out checklist depending when server is scheduled.

- Protects establishment and patrons by adhering to sanitation, safety, and alcohol beverage control policies.

- Helps patrons select food, beers and beverages by presenting menu; offering new beers; suggesting food options and specials; explaining the chefs specialties; identifying appropriate beers for new patrons; answering food preparation questions.

- Communicates orders to bar and kitchen by always recording patrons; choices; identifying patrons special dietary needs and special requests.

- Keeps kitchen staff informed by noting timing of meal progression.

- Serves orders by picking up and delivering patrons choices from bar and kitchen; delivering
accompaniments and condiments as requested.

- Responds to additional patron requirements by inquiring of needs; observing dining process.

- Maintains tables in a neat manner by removing empty glassware and plates as completed;
replenishing utensils; refilling water glasses; being alert to patron spills or other special needs. Wipes
tables.

- Concludes dining experience by thanking customers and inviting patrons to return.

- Obtains revenues by totaling charges; issuing bills; accepting payments delivering bill, returning change or credit card and signature slip to patrons.

- Contributes to team effort and engages with the team in a constructive manner.

- Maintain a positive and professional approach with coworkers and customers at all times, complying with all applicable sanitation, health and personal hygiene standards and following food-handling procedures.
