Sous Chef

Lion Bridge Brewing Company is a neighborhood brewery and taproom located in the Historic Main Street District of Cedar Rapids, IA.

Position Description
Lion Bridge Brewing Company is looking for a professional Sous Chef to be the second in command in our kitchen, following our Executive Chef’s specifications and guidelines. The successful candidate will employ its culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers’ satisfaction and ensure that our food is a catalyst for conversation and community.

Responsibilities

  • Help manage kitchen staff. Work with chef to schedule staff’s hours.
  • Prepare food and set up the line.
  • Enforce portion control.
  • Put forth unique items for holidays, special dates and festivals.
  • Prepare foods for private events.
  • Participate in competitions and external marketing opportunities to promote Lion Bridge with chef.
  • Use local ingredients/ collaborations as much as possible.
  • Ensure inventory is stocked appropriately every Wednesday.
  • Take inventory weekly to provide to chef for ordering.
  • Ensure that food comes out simultaneously, in high quality and in a timely fashion.
  • Comply with nutrition and sanitation regulations and safety standards.
  • Train and coach new kitchen employees in preparation techniques and company policies.
  • Help with recruiting of new kitchen employees.
  • Responsible for the daily, weekly, bi-weekly and monthly cleaning of the kitchen.
  • Maintain a positive and professional approach with coworkers and customers complying with all applicable sanitation, health and personal hygiene standards and following established food production procedures.
  • Responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.

Requirements

  • At least 3 years of line cooking experience in a fast paced environment.
  • Serve Safe Certified.
  • Excellent understanding of various cooking methods, ingredients, equipment and procedures.
  • Accuracy and speed in executing assigned tasks.
  • Familiar with industry’s best practices.
  • Management experience.

Position Type/Expected Hours of Work- This is a full time salaried position.

WEEKEND LINE COOK

Position Description
Lion Bridge is looking for a professional line cook to prepare food to the chef’s specifications and to set up stations for menu. The successful candidate will play a key role in contributing to our customer satisfaction, achieving our mission of preparing food that is catalyst to conversation and community.

Responsibilities

  • Set up and stock stations with all necessary supplies
  • Prepare food for service (e.g. chopping vegetables, cutting/tendering meat, preparing sauces)
  • Cook menu items in cooperation with the rest of the kitchen staff
  • Answer, report and follow chef’s instructions
  • Inform chef immediately of inventory shortages to avoid running out of menu items
  • Clean up stations and equipment
  • Stock inventory appropriately
  • Ensure that food comes out simultaneously, in high quality and in a timely fashion
  • Comply with nutrition and sanitation regulations and safety standards
  • Maintain a positive and professional approach with coworkers and customers complying with all applicable sanitation, health and personal hygiene standards and following established food production procedures. The cook is responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.

SERVER/ BEERTENDER

Position Description

Lion Bridge is looking for a professional server to serve patrons by guiding them through food and beverage selections; presenting ordered choices and maintaining the brewery ambiance. The successful candidate will play a key role in contributing to our customer satisfaction, achieving our mission of serving beer and food that is catalyst to conversation and community.

Responsibilities

- Adheres to opening shift checklist, end of shift checklist and close out checklist depending when server is scheduled.

- Protects establishment and patrons by adhering to sanitation, safety, and alcohol beverage control policies.

- Helps patrons select food, beers and beverages by presenting menu; offering new beers; suggesting food options and specials; explaining the chefs specialties; identifying appropriate beers for new patrons; answering food preparation questions.

- Communicates orders to bar and kitchen by always recording patrons; choices; identifying patrons special dietary needs and special requests.

- Keeps kitchen staff informed by noting timing of meal progression.

- Serves orders by picking up and delivering patrons choices from bar and kitchen; delivering
accompaniments and condiments as requested.

- Responds to additional patron requirements by inquiring of needs; observing dining process.

- Maintains tables in a neat manner by removing empty glassware and plates as completed;
replenishing utensils; refilling water glasses; being alert to patron spills or other special needs. Wipes
tables.

- Concludes dining experience by thanking customers and inviting patrons to return.

- Obtains revenues by totaling charges; issuing bills; accepting payments delivering bill, returning change or credit card and signature slip to patrons.

- Contributes to team effort and engages with the team in a constructive manner.

- Maintain a positive and professional approach with coworkers and customers at all times, complying with all applicable sanitation, health and personal hygiene standards and following food-handling procedures.
